Baked Salmon Fillet with Potato Salad
This baked salmon fillet with potato salad is full of brain boosting omega 3 fish oils and iron. This healthy and filling dish is perfect for summer get togethers.
Ingredients:
- 1 Large Salmon Fillet
- 1 lemon grass stick
- 1 tbsp Lemon juice
- ½ teaspoon Black pepper
- 1 tbsp Salt
- 1 lemon thinly sliced
- ½ cup coriander chopped
- 1 tbsp olive oil
For Potato salad:
- 2 Medium size Potato
- ½ cup chicken boiled And Shredded
- ½ Red Kidney Beans Boiled
- 1 Green onion chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup Boiled Corn
Method For Salmon Fillet:
Wash your salmon fillet with salt and vinegar. Then take aluminum foil and placed on your counter in the middle made a bed of coriander and lemon grass. And put your fillet on top, then sprinkled salt and black pepper and add 1 tbsp Olive oil .Place thinly sliced lemons and fold your foil and make a parcel. Place your Salmon Fillet in a baking oven at 190 degrees for 35 minutes.
For Potato salad:
Boiled potatoes and mashed them. Then take another pot, boiled chicken, corn, and red kidney beans separately. In another bowl, mix mashed potatoes, chicken, corn, red kidney beans and add green onions, chopped salt and black pepper; your salad is ready.
Assembling:
Take your serving dish and put your salad in middle, then at the top put your salmon fillet and serve.
