Delhi Special Nihari Everyone’s Favorite.
Delhi Special Nihari is a South Asian beef stew, and is an unquestionable South Asian staple revered all over the subcontinent. The rich, brothy dish is a conglomeration of flavorful spices, tender meat, carefully placed cilantro, and a medley of other garnishes. It is typically eaten with naan bread.
For ingredients you all need:
- 2 kg (Mutton or Beef )
- Red chili powder (2 ½ tbsp)
- Salt (2 ½ tbsp)
- Garam masala (2 ½ tbsp)
- Ginger & Garlic powder (2 ½ tbsp)
- Turmeric (1 tbsp)
- Cumin powder (2 tbsp)
- Black pepper corn (2 tbsp)
- Fennel seeds (saunaf) (2 tbsp )
- Green cardamom (10 pieces )
- Cloves (1 tbsp )
- Cinnamon stick (4 to 5 pieces)
- Onion (1 large )
- Green Chilies (finely chopped)
- Lemon (1)
- Fresh ginger (2 inch finely sliced )
- Ghee (2 to 3 cups)
- Atta (1 cup dissolved in water)
Method:
- Heat ghee add ginger and garlic paste, salt, red chili powder and fry it on high flame.
- Then add (Mutton or Beef cubes) and fry it till it changes color.
- Now add Nihari masala mix well, then add 12 glasses of water and wait for a boil on high flame. Now bring the flame on medium and cook till the beef in half done.
- Then remove the mutton pieces and keep aside.
- Mix the wheat flour with water and make a paste , and add this paste in gravy mix well and keep flame on medium flame.
- Add meat cubes and simmer on low to medium until the gravy gets thick.
- Heat oil and fry onions till golden brown and add in gravy cook for further 10 minutes.
- Serve hot with naan, lemon ginger, and green chilies.
