Kaleji literally means liver of any animal, usually beef, lamb, or chicken. To make this Kaleji Masala or Liver Fry recipe, you can fry bite-size pieces with spices. Kaleji masala or Liver Fry is a semi-dry curry recipe that is delicious with chapatti.

Ingredients:

  • ½ cup oil
  • 1 medium (125 gram) onion, finely sliced
  • 2 tablespoons ginger garlic paste
  • ½ tablespoon small green chili paste
  • ½ tablespoon coriander powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • ¼ teaspoon black pepper
  • 2 (200 gram) tomato, purred or sliced
  • ⅓ cup yogurt
  • 1 tablespoon dried fenugreek leaves
  • 500 grams ( 1.1 pound) lamb or beef Liver, cut in to small pieces.
  • 1 teaspoon salt
  • 2 tablespoon butter or ghee, optional
  • 1 fistful of coriander leaves, chopped
  • 3 medium green chilies, sliced
  • 2 inch ginger sliced
  • 2 lemon wedges, optional

Method:

  • Add the oil into the pan and heat up on medium heat until hot
  • Add the garlic paste and sauté for 1-2 minutes until fragrant
  • Add the finely diced onions and cook on medium heat for 4-5 minutes
  • Add the chili powder, turmeric powder, cumin powder, coriander powder and Kashmiri chili powder, then cook the spices for 3-4 minutes – add a tablespoon of water to allow the spices color to be released and prevent burning
  • Add the chopped tomatoes and cook for 3-4 minutes until the oil separates
  • Add the chicken liver and cook for 2-3 minutes on high heat
  • Add the remaining water and cook on medium heat for 6-8 minutes
  • Add the salt, garam masala and sliced bullet chili then cook for another 1-2 minutes
  • Add the dried fenugreek leaves and chopped coriander
  • Serve immediately with homemade chapatti and enjoy!
