Club Sandwich bascially originated in America but is also a huge favorite of the Asian community. Club Sandwich basically three slices of sandwich bread with layers of meat, (chicken), cheese, salad, mayonnaise and eggs in between.The name probably comes from its popularity at resorts and country clubs.

Ingredients:

  • Ingredients
  • 125 g boneless chicken cut in strips
  • 1-1.5 teaspoon tandoori spice mix
  • 1 tablespoon yogurt
  • 0.5 tablespoon lemon juice
  • 0.25 teaspoon paprika powder
  • 1 tablespoon oil
Sauce:
  • 2 tablespoon mayonnaise
  • 1 tablespoon red chili sauce
  • 0.5 tablespoon vinegar
  • 0.25 teaspoon garlic powder
  • 0.5 teaspoon fresh/dried parsley
Assembling:
  • 3 slices sandwich bread
  • 1 hard-boiled egg sliced
  • 0.5 tomato slices
  • cheddar cheese slices as required
  • salad leaves a handful
  • salt & pepper to taste.

Method:

  • Marinate the chicken with tandoori spice mix, yogurt, lemon juice and paprika powder. Fry it in oil until fully cooked and slightly charred.
  • Make the mayo dressing by mixing all its ingredients together.
  • Take a slice of bread. Add slices of cheese, tandoori chicken, drizzle the spicy mayo sauce, then place the tomato slices.
  • Top this with another piece of bread. Add the sliced boiled eggs, more mayo dressing, a dash of salt and crushed black pepper, some salad leaves, another slice of cheddar cheese (optional) and add the final slice of bread.
  • Cut it diagonally, and secure each sandwich with a toothpick or cocktail sword. Serve with fries/crisps.
